Easy Cajun Rice and Beans

Easy Cajun Rice and Beans - Easy Cajun Rice and Beans is a simple one pot recipe ready in 30 minutes!  Packed full of smoked sausage, black beans, rice and tons of flavor!

Ingredients
1 Tablespoon Olive Oil
1 Pound Smoked Sausage
2 Medium Bell Peppers Sliced
1 Small Yellow Onion Sliced
2 Cloves Garlic Minced
1 Cup Long Grain White Rice
1 14.5 Ounce Can Diced Tomatoes
2 1/4 Cups Chicken Broth
2 teaspoons Cajun Seasoning
1 teaspoon Italian Seasoning
Salt & Pepper to taste
2-3 Drops Hot Sauce Optional
1 15Ounce Can Black Beans, drained and rinsed well

Instructions

1. Heat the olive oil in a large, deep, skillet over medium-high heat.

2. Slice the smoked sausage into rounds, then, slice each round in half.

3. Once the oil is hot, add the sausage, sliced peppers, and onions to the pot and cook, stirring occasionally for 3 minutes.

4. Add the minced garlic, cook, stirring constantly for 1 minute.
